Whole fenugreek (methi) seeds are small, hard seeds with a warm, slightly bitter and nutty aroma that deepens when roasted. They add a characteristic savory bitterness and aromatic backbone to curries, dals, pickles and spice blends. Commonly used for tempering (tadka) in hot oil, or soaked and ground into pastes, they can also be roasted and powdered to mellow the bitterness. Store in an airtight container away from heat and light; dry-roasting before use brings out more flavor.
